Protein Pancakes.

I love me some pancakes. There is just something about them that just fills my heart with love and my stomach with some good noms.

But they aren’t exactly that healthy for you- all the sad faces.

A while ago the trend of making protein pancakes using just eggs and banana was all the range- so of course I tried. Not a fan.

I could never get the consistency right and they tasted a bit like warm egg-y bananas. Well I suppose that is exactly what they were.

So I thought, why cant I make a recipe that doesn’t include banana? This also meant that the carb limit was dropped, as those bad boys contain over 20g of carbs. So on low carb days, that is nearly all my limit gone, just on a pancake.

I swapped out the banana and focussed on the normal pancake recipe, and changed some of the ingredients for healthier and natural alternatives until I had perfected my pancakes- I added protein powder into these as a substitute for flour, and to get some good ol’ protein back into my body. Ready to burn at the gym. So these protein┬ápancakes are actually now beneficial to my fitness routine. YAY.

They taste good, and are good for you and that makes me happy. They are also a lot more fluffy than the original mix, just like a good pancake should be.

Ingredients: Makes 6 Small/Medium Pancakes.
2 Scoops of Protein Powder (I use PHD Strawberry Powder)
2 tsp. Baking Powder
1 tbsp. Coconut Flour (You can use all purpose)

2 Eggs
4 tbsp. Grass fed butter (melted)
1 tbsp. Goats Milk Yoghurt (Natural if you don’t have Goats)
A few drops of Vanilla Extract (optional)

Method:
Place all dry ingredients in a bowl.

Place all wet ingredients in a separate bowl and mix to combine.

Pour wet into dry, and mix. Be careful not to over mix. The mixture should still be a bit lumpy.

Allow to sit for 5 minutes.

Put some oil/coconut oil in a frying pan on a medium heat.

Place the mixture in the frying pan (depending on what size you want)

Cook for 3/4 minutes on each side.

ENJOY.

Top with what ever toppings take your fancy. Mine at the moment seem to be frozen fruit, coconut sugar and lemon juice.
