Frighten-ly Healthy Halloween Treats: Veggie Edition.

Halloween is an all inclusive holiday- no ghoul gets left behind.

So if you caught my Fruity Halloween recipes yesterday, you may be left thinking, what about the veggies? Where’s their Halloween debut?

Well- no need to fear.

I have the best, and only veggie Halloween recipe you need this year. Stuffed pepper-o-lanterns, complete with the best scary face you have ever seen on a humble bell pepper.


A sure fire way to get your scare on at the dinner table. This recipe can be created in less than half hour, and you can stuff your peppers with anything you like, if my tasty herbed chicken, veggie rice doesn’t take your fancy.

Why not try a fire-y chilli, or a curry for a different spin?

Ingredients: For 2
Orange Bell-Peppers (1 Each)

1 Chicken Breast
1/2 Onion
1/2 Courgette
2 Mushrooms
Handful or Peas/ Sweetcorn.
Sprinkle of Garlic
100g Rice
Chicken Stock
Salt, Pepper to taste.
Mixed Herbs to taste.


Using a small pairing knife, carefully cut off the top of your pepper- take out the seeds, then cut your best scary face.

Sauté your onions in a little bit of butter and garlic then add in your chicken chunks and cook for 4/5 minutes.
Add in some dried mixed herbs, along with the courgette, mushrooms, pea/sweetcorn and cook for a further 3/4 minutes.
Add in your dry rice to the pan and stir for 2/3 minutes to ‘crack’
Add in your chicken stock and leave to cook for 15 minutes or until your rice is fully cooked. (Keep an eye on them, and top up with more stock if drying out)
Once fully cooked, add salt and pepper to taste and drain any excess liquid.

Fill your peppers with the rice mixture, then add on its top and serve.

A scarily brilliant dinner.
