Do you ever get an idea for a recipe in your head, and you try it out not knowing how it’s going to go and it goes better than you can ever imagine?! This is exactly what happened today! I was laying in bed dreaming about my delivery of Ape Snack goodies that arrived yesterday and wondered if there was a way to use their Coconut Chia Snacks as a crispy coating on a delicious nugget – and it worked, it worked sooooo well. So much that I just had to share the recipe with you.
These Coconut Chia Baked Nuggets are a simple, quick and healthy alternative to the normal nugs out there. Using Ape Snacks Coconut Chia and Coconut Curls with Pepper and Spice as the coating takes away the need for breadcrumbs and flour. I used turkey pieces as a lean alternative to chicken and baked rather than fried so there was no need for any additional oil. I then paired them with a healthy homemade fresh tomato sauce that just brought everything together in the most delicious way.
I love the subtle sweetness that the coconut gives over a normal plain crumb and pairs perfectly with the light sweet flavour coming from the dipping sauce. The added chia in the snacks means they will help you to feel fuller for longer, and the pepper and spice from the curls means no added seasoning is needed at all – so you can make these babies with only a few ingredients.

COCONUT CHIA BAKED NUGGETS
Makes: 10 Nuggets
Time to Make: 5 minutes plus 25 minutes baking.
1x Bag of Ape Snacks Coconut Chia Bites
1x Bag of Ape Snacks Coconut Curls with Pepper and Spice
1 x Egg
1x Turkey Breast – cut into nugget sized chunks.
10 Baby/Plum Tomatoes
10ml of Oil (I use coconut but feel free to use a good quality olive oil)
1 Small handful/ 5 or 6 leaves of Fresh Basil (or dried if you don’t have fresh)
25ml of Apple Cider Vinegar
Pinch of Salt and Pepper
Pre-heat your oven to 400 f/ gas mark 6
Blitz your Coconut Chia Bites and Coconut Curls until a powder consistency – place into a shallow bowl or plate.
Mix an egg in a separate bowl.
Place your turkey nuggets one by one in the egg mixture, coat, then place in your coconut mixture and coat. Place on a baking tray and repeat until all turkey chunks are coated.
Bake in the oven for 15 minutes, turn and then bake for a further 10/15 minutes until crispy and cooked through.
While your nuggets are baking – place all tomato sauce ingredients in a blender apart from the salt and pepper and blend until combined.
Taste and season accordingly – place in the fridge while your nuggets bake.
Once your nuggets are baked, remove from the oven and serve with your dipping sauce.
