Summer (ish) is here, and that means that we need to be fuelling our bodies with lighter, healthier dishes- especially when they come in the form of a deeeelicious and simple fig, goat’s cheese and walnut salad.

I love creating fresh, crisp, tasty food that is light on the stomach and even lighter on the palate. But they can get a little bit boring, and mundane, and oh really is it another tomato, feta concoction again?

Which is why I am here to brighten up your day with this gorgeous, fragrant and textured salad. We are going to pair a slightly sweet and sticky (through the addition of honey) grilled fig, with creamy goats cheese and crunchy walnuts.

This salad can be made in under 10 minutes- and consumed in even less- but will keep you full for longer than the norms, due to the good and wholesome fats found in the cheese and nuts. With added nutrients and vitamins in the figs, rocket and sweetener from the honey.

3 Ripe Figs
100g Walnuts
1/2 Lemon
Drizzle of Honey
Drizzle of Olive Oil
Handful of Rocket
100g of Goats Cheese.

Pre-heat your oven to 220c.
Slice your figs and place on the tray- sprinkle with a little salt and pepper and drizzle over some olive oil.

Bake for around 10 minutes- until golden and slightly soft. As soon as they come out the oven drizzle over some honey and place on the side for around 10 minutes to cool. Pour the juices from the tray into a small bowl.

On the same tray- place your walnuts and put in the oven for 5 minutes until golden. Remove and allow to cool.

In a bowl- add your rocket- drizzle over some olive oil and the 1/2 lemon juice and mix. Top that with crumbled goats cheese, cooled walnuts and cooled figs.

Drizzle over some extra honey along with the fig juice and enjoy.
