Taking that classic pairing of cheese and apple – but taking it to a whole new level.
I’ve combined two different kinds of cheese with honey and thyme and black pepper covered apple slices for a dip that won’t stop giving. I actually encourage you to double-dip this one – because it’s just that good. The cheese whips up into a light mousse sweetened by the addition of honey and cuts through with the spiced black pepper. The apple slices become the ultimate vehicle to transform all that flavour from plate to mouth in a few quick seconds.

HONEY WHIPPED GOAT’S CHEESE WITH BLACK PEPPER APPLE DIPPERS
Time to make: 10 Minutes. Makes: 2 portions.
2 Kanzi Apples
250g Soft Goats Cheese (wax removed)
100g Cream Cheese
5tbsp Heavy Whipping Cream
Bunch of Lemon Thyme (feel free to use normal thyme and add 1tbsp of lemon juice)
Pinch of Cracked Black Pepper
Add your goat’s cheese, cream cheese and heavy whipping cream into a blender along with the honey and lemon thyme (or thyme and lemon juice) and blend to combine. The mixture should be thick and fluffy. Pour into two pots and pop in the fridge.
Slice your Kanzi apples into thin slices and spread across a chopping board. Sprinkle across some cracked black pepper and thyme leaves.
Add them to a plate, 1 apple per plate, and finish by removing your goat’s cheese pots from the fridge.
Add an extra swirl of honey, if desired on top and enjoy.
